Asian fusion rolls. Not just fish; Korean BBQ beef, lobster, barbacoa, spam, and vegetarian options. In rolls, tacos or quesadillas.
The Pokey Truck

Not your average sushi truck. Hawaiian version of Japanese sashimi. Bite-sized pieces of raw fish doused in seasonings. I've had the "burrito" with the spicy tuna and crab - YUM! Basically a sushi roll the size of a burrito, made with soy/rice paper instead of sea weed.
